Mechanism of Action

Phosphorus is mainly stored as phytate in cereals. The phytate phosphorus is hardly accessible for the poultry; hence, large amounts of phosphorus are excreted through the waste, leading to economic and environmental problems. Phytic acid or phytate is found in all plant-based compounds, especially in cereals and leguminous seeds, which is an indigestible nutrient decreasing the absorption of phosphorus as well as essential minerals such as zinc, iron, calcium and potassium plant materials for poultry due to the minor secretion of phytase in gastrointestinal tract. Phytic acid also forms complex compounds with proteins and starches and reduces their solubility. Phytate reduces the activity of digestive enzymes such as alpha-amylase and lipase or proteases such as pepsin and trypsin in the gastrointestinal tract by negatively affecting their activity. Studies indicated that using phytase in poultry feed increases the bioavailability of phosphorus, improves the digestibility of nitrogen and amino acids and apparent metabolizable energy, and ultimately improves poultry performance.
